# Directions:

01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until evenly moistened.
03 - Press the mixture firmly into the bottom of the prepared pan to form an even layer.
04 - Bake the crust for 8 minutes, then remove from the oven.

# Expert Advice:

01 -
  • They taste exactly like s'mores but you don't need to stand around a fire or deal with sticky fingers.
  • The marshmallows get properly toasted and golden, which is harder to achieve over actual flames.
  • One pan means one cleanup, and they're perfect for feeding a crowd without fussing.
02 -
  • Don't skip the chilling step, I learned this the hard way when my first batch turned into gooey mess as soon as I tried to cut it.
  • The marshmallows continue to cook a tiny bit after you pull the pan out, so they should look barely golden, not brown, or they'll taste burnt and bitter.
03 -
  • Use parchment paper with overhang so you can lift the whole thing out and cut on a cutting board instead of wrestling with a knife in the pan.
  • If your marshmallows aren't getting golden in 12 minutes, your oven might run cool, don't panic, just keep checking every minute until they're the color you want.
